| Chicken and mushroom pot pies |

| Ingredients |
20ml olive oil
600g chicken thigh fillets, no skin, cut into 3cm pieces
150g button mushrooms, sliced
2 teaspoons flour
¼ cup chicken stock or white wine
1 tablespoon lemon juice
1 small red capsicum, sliced
6 spring onions, sliced diagonally
Salt and pepper to taste
1 sheet ready rolled puff pastry, cut into 4 squares
1 egg yolk |

| Method |
1. Heat oil in large pan over high heat. Add chicken and cook, stirring for 5 minutes until lightly browned. Add mushrooms. Reduce heat to moderate and cook for 2-3 minutes until softened.
2. Add flour to pan and cook stirring for 3 minutes. Pour in stock and lemon juice.
Stir until boiling.
3. Add capsicum and spring onion. Remove from heat. Season with salt and pepper
to taste. Chill until required.
4. Preheat oven on hot air setting to 200°C, using rapid heating function. Line universal pan with baking paper.
5. Divide chicken mixture between 4 x 1½ cup capacity microwave/oven safe dishes.
6. Top each with square of pastry. Cut 2 small slits in top of each pie to allow steam
to escape. Brush with egg yolk.
7. Arrange pies evenly spaced on prepared pan. Slide pan into oven, with tapered edge facing the oven door, on shelf position 2.
8. Set oven to MicroCombi gentle function and cook pies at 200°C for 15 minutes until pastry is crisp and golden brown, and filling is piping hot. |

| Recipe Tips: |
If cooking one pie, reduce cooking time to 9-10 minutes.
This recipe is ideal for busy families, prepare filling in advance and chill until required. Place cold filling into dishes, top with pastry and bake. Dinner will be ready in 15 minutes!
Turn family left overs into a fresh new meal by using as a filling for delicious pies. Replace the chicken filling with left over chilli con carne, meat sauce, casseroles or curries.
To cook in your Neff oven, preheat oven on CircoTherm setting to 200°C, using rapid heat function. Bake for 25-30 minutes, until pastry is crisp and golden and filling is heated through. |

Cooking Time: 15 minutes

| Ingredients |
4 red apples (Royal Gala) approx 120g each
2 tablespoon brown sugar
2 tablespoons chopped walnuts
2 tablespoons sultanas
1 tablespoon rolled oats Finely grated rind of ½ lemon
30g butter, melted
Pinch nutmeg |

| Method |
1. Remove core from apples, leaving 2cm in base of apple. Score apple skin with sharp knife
2. Cut thin slice from base of apple if necessary so that apple sits level in dish.
3. Arrange apples in microwave/oven safe baking dish.
4. Combine remaining ingredients. Spoon into centre of apples and spoon any extra filling
on top.
5. Set oven to MicroCombi, intensive, 180°C.
6. Place dish on glass pan and slide into oven on shelf position 2. Cook for 15 minutes or until apples have softened and filling has some crunch.
7. Serve with quick vanilla custard. |

| Quick Vanilla Custard |

Setting: Microwave power level 600 watts
Cooking Time: 2-3 minutes
Makes: 2 cups |

| Ingredients |
1 tablespoon custard powder
1 tablespoon sugar
½ teaspoon vanilla extract
500g low fat milk
30g butter, melted |

| Method |
1. Place custard powder, sugar and vanilla in microwave safe jug. Gradually blend in milk.
2. Slide glass pan into microwave on shelf position.
3. Place jug on shelf and cook on 600watt power for 1 minute. Stir and return for further
1 minute. Mixture should just coat the back of a spoon. If necessary return to microwave
for further 1 minute. |
